CASHEW/SWEET AND SOUR CHICKEN

Use 2 c. chopped, cooked chicken or stir fry tenders with vegetables of choice (mushrooms, green pepper, water chestnuts, green onion, celery, and carrots). About 1 c. of each of the vegetables

Add sauce and simmer. Serve over rice.
Sauce:
½ c. brown sugar
⅓ c. vinegar
1 ½ c. pineapple juice or crushed pineapple
3 T. soy sauce
3 T. ketchup
2 T. cornstarch
1 c. chicken broth

Throw some cashews in if you like them
